copycat tomato basil soup recipe

Hello all! The last couple weeks have been kind of crazy! I did manage to pull out my sewing machine and get the window treatments finished for Adele’s room. She turned 4 months old on Sunday so I figured I’d better get her room finished so she can move in! I’ll hopefully get some photos of her room taken soon and share the progress I’ve made so far. But for today I’m sharing with you this delicious soup recipe I stumbled across via pinterest the other day. It was so quick and easy to make and soooo good! Even my 6 year old ate it and she isn’t really a big fan of soups. And can I just tell you how much I love fresh basil! The smell is amazing and anything with fresh basil in it has got to be good right?! Serve it with crispy sourdough grilled cheese sandwiches and you’ve got a delicious week night dinner in less than 20 minutes!

  • 1 28 oz can crushed tomatoes
  • 1 28 oz can diced tomatoes
  • 1 Tbsp crushed garlic
  • 1 14 oz can chicken broth {or 2 cups}
  • 2 Tbsp sugar
  • 1/3 cup butter
  • 1 cup heavy cream
  • 15-20 fresh basil leaves, chopped
  1. Combine the tomatoes, broth and garlic in a sauce pan. I used an immersion blender to chop the tomatoes up a bit so it wouldn’t be quite so chunky.
  2. Bring to a boil and boil for 10 minutes.
  3. Reduce the heat to low and stir in the sugar and butter and mix until they are dissolved, melted and well combined.
  4. Very slowly pour in the heavy cream while simultaneously stirring until all the cream is combined and the soup is creamy.
  5. Stir in the basil.
  6. Serve it hot topped with freshly grated Parmesan cheese!
