But until then here is a recipe for an amazingly easy recipe for those nights when you want something quick and easy for dinner. It’s meant to be a side dish but we just eat it by itself with some salad when I’m in a pinch. This recipe came from Matt’s grandma and in my recipe book it’s called Grandma’s Mac and Cheese but for today I renamed it the Modest Macaroni.


  • 2 cups elbow macaroni noodles
  • Tomato sauce (about 21 oz.) You could also use spaghetti sauce
  • Cheese I usually use a mixture of cheddar and mozzarella 
  • I like to add some Italian seasonings and garlic salt to taste
Preheat your oven to 350 degrees. Boil the noodles in salted water until tender and drain. Layer the cooked noodles, sauce and cheese in your dish. I like to sprinkle on some seasonings into the sauce but I try not to add a lot as Matt likes it without since that’s the way his grandma made it. It’s important to use a good quality cheese since most of the flavor comes from that. I don’t like to use reduced fat in this recipe. It just doesn’t melt the same. Cook for 15-20 minutes or until the sauce is bubbling and the cheese is melted. Easy and cheesy! Ya can’t beat that!
