I told Claire she could choose whatever she wanted for dinner last night and she chose pancakes. We eat breakfast for dinner at least once a week. It’s quick, easy and everyone loves it! In honor of fall I changed up our usual pancake recipe for one a little more festive. I posted about it last year but I think it deserves a repost so here it is again.

Pumpkin Pancakes
1 cup flour
1 Tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs separated
1 cup milk
1/2 cup pumpkin
2 Tablespoons vegetable oil

Mix dry ingredients in a large bowl. Then mix egg yolks, milk, pumpkin and oil in a separate bowl. Stir into dry ingredients. Beat the egg whites with a mixer until soft peaks form then fold into the batter. Cook them on a greased skillet over medium-low heat until golden brown. I funneled my batter into an empty and cleaned out ketchup bottle and squeezed the batter onto the skillet. It’s so much easier to make shapes with them that way.
