Matt’s mom had been asking me to make her some white chocolate chip scones for a while so I knew I wanted to make her some for Mother’s Day to go along with the magnetic board I made. I was looking back at the recipes I posted and I can’t believe I haven’t posted this one sooner. It’s delicious! I got this recipe from my sweet friend Stephanie several years ago and it has always been a hit in our house!
I made two batches. One white chocolate chip batch for Matt’s mom and one dark chocolate batch for mine.
Then I packaged them up in a neat little bag.
Basic Scone Recipe
- 2 cups white flour
- 1/2 cup sugar
- 5 Tbs butter, softened
- 1 egg, beaten
- 1/2-3/4 cup buttermilk
- 1 tsp. vanilla extract
- 2 tsp. baking powder
- chocolate chips or you could add fruit (blueberries, raspberries etc)
Preheat your oven to 425 degrees. Blend together the 2 cups white flour, 1/2 cup sugar and softened butter. In a separate bowl mix 1 beaten egg, buttermilk, vanilla and baking powder. Add to the dry mixture to make dough. Stir in the chocolate chips. Don’t over stir! Using a spoon I spread my dough into a greased mini scone pan. Sometimes I sprinkle a tad more sugar over the top and then bake for 15 minutes or until the edges are lightly browned. Sprinkle with powdered sugar and enjoy!
