I’m always on the lookout for quick and easy recipes. And if I can throw it in the crock pot and not think about it again till dinner, I’ve just died and gone to Heaven. Matt discovered these taco skillet sauces from Rick Bayless while wandering through Whole Foods the other day. I was skeptical at first but the tacos were delicious!!! There are several different flavors to choose from. This is now a staple in my pantry. Whenever I need an easy meal I just add a package or two of the sauce to my crock pot with chicken thighs (chicken breasts have a tendency to get tough) and cook on low all day. I add a little chicken broth if needed to cover the chicken. Once the chicken is done, I take it out of the crock pot and shred it with a fork. If you’re not eating it right away you can put the shredded chicken back in the crock pot with the sauce to keep warm. 

Serve it with your favorite toppings and Mexican rice. Yum!!
