I love the combination of chocolate and pumpkin! Really what does chocolate not go with? So the other day the kids and I made these pumpkin chocolate chip muffins and they were so yummy! And isn’t it a tad bit heathy since it has pumpkin in it? At least that’s what I’m telling myself!! Here is the recipe.
1 3/4 cup (1 15 oz can) pureed pumpkin
1 1/2 cup brown sugar
1/2 cup butter, softened
3 cups all purpose flour
2 Tablespoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
2 cups chocolate chips
Preheat oven to 350 degrees. Combine the pumpkin, brown sugar, butter and eggs and mix until creamy. In a separate bowl, combine all of the dry ingredients except the chocolate chips. Mix the dry ingredients into the wet ingredients. Stir in the chocolate chips. Scoop the batter into greased muffin tins or silicone muffin cups (love those!). Bake on the center rack about 20-25 minutes or until a toothpick poked into the center comes out dry. Makes approximately 24 muffins.
